Carringtons create some fantastic flavours with their Chillichups, Sauces and Rubs, a great addition to any meal. Based in Faversham, Kent, Carrington believe in creating vibrant flavours from honest ingredients.
For this spicy box, we have selected three of our favourites: Chillichup, a mild Chilli and tomato sauce combined with Moroccan spices. It is sweet to taste with a warm chilli hit and goes perfectly with meat, fish and vegetables. To be used as an accompaniment, a marinade or in cooking to add spice and flavour to your food.
Chiilichip Rub, A mild chilli and tomato rub combined with Moroccan spices. Sweet to taste with a warm chilli hit. This rub is perfect for marinating meat or fish. And last but not least the fabulous Hot Chilli Hodgepodge, seriously hot chilli and smoked garlic infused oil using naga chilli and capsicum essence. It brings out the heat in any dish with an intense flavour and long-lasting heat. Use it for cooking, marinades and dressings. It is what you make of it!

Slow Baked Chillichup Rubbed Ribs
1 Rack Baby Back Ribs
50g Chillichup Rub
Preheat your oven to 250ºC. Prepare the ribs. Most racks have a tough membrane, across the back side of the ribs. Use a spoon handle to loosen this membrane and peel it off. Add the rub to a metal bowl with the ribs and to coat both sides of the ribs well. Position the racks in a large baking pan. Leave to marinade for 30 min. Cook for 15 minutes then, without opening the oven, reduce the oven temperature to 150ºC and continue baking until the meat is nicely browned, about 3 hours or so. Serve and share with Chillichup.
Hodgepodge Wild Garlic & Chilli Pesto
100g of wild garlic/fresh basil
50g parmesan cheese grated
50g pine nuts toasted
Carrington Hot Chilli Hodgepodge
Lemon juice to taste
Salt and pepper
Wash the wild garlic/basil and blitz in a food processor. Next add in the parmesan cheese and nuts. Add in olive oil until the mix loosens, then switch to the smoked garlic oil until the mix is smooth and runny. Add lemon juice, salt and pepper to taste. Use on pasta, roasted vegetables, seafood, steaks or oysters.
On Its Own
Add to your eggs in the morning for a spicy wake-up call.
Marinade With It
Infuse flavour and spice into meat or fish to make for a great bbq or oven baked dish.
Dress It Up
Mix with yoghurt or mayo for a fiery dressing or dip.
